Almond Maple Granola

Ingredients:

4 cups mixed organic whole grain flakes, such as oat, kamut, barley and wheat

1 cup sliced natural almonds

2 tablespoons cold unsalted butter, cut into 6 pieces

1/4 cup all-purpose flour

2 tablespoons sugar

1 inch salt

1/3 cup pure maple syrup

1 teaspoon pure vanilla extract

1/2 teaspoon pure almond extract

1/2 cup golden raisins

1/2 cup dried cranberries

Directions:

Preheat the oven to 350掳. Combine the whole grain flakes with the almonds on a large rimmed baking sheet. Spread in an even layer and toast for about 10 minutes, stirring once, until light golden. Transfer the grain mixture to a large bowl. Leave the oven on. Coat the warm baking sheet with 1 teaspoon of the butter. In a mini processor, combine the remaining 1 tablespoon plus 2 teaspoons of butter with the flour, sugar and salt and pulse until the mixture resembles coarse crumbs. Or, pinch the ingredients together with your fingers. Add the crumbs to the grain mixture and toss. In a small pitcher, combine the maple syrup with the vanilla and almond extracts. Pour over the grain mixture and stir until the grains are evenly moistened. Spread the granola on the buttered baking sheet in an even layer and toast for 12 to 14 minutes, stirring once, until golden and dry. Let cool completely then stir in the raisins and cranberries. How do you make home made granola bars?
2陆 cups rolled oats (old-fashioned or instant)

1 cup shredded coconut

1/2 cup raw sunflower seeds

1/4 cup sesame seeds

1/2 cup wheat germ

1/2 cup slivered almonds

4 tablespoons butter or margarine

1/4 cup dark brown sugar

1/2 cup honey

1 cup raisins

2 teaspoons vanilla extract

While your oven is preheating to 300掳F, spread the oats, coconut, sunflower seeds, sesame seeds, wheat germ and almonds evenly on a 9" x 12" baking sheet. Bake these dry ingredients for 20 minutes, stirring them occasionally.

Meanwhile, heat the butter (or margarine), brown sugar and honey in a small saucepan, allowing the brew to simmer until the oat mixture is ready to come out of the oven. (If you or yours like really crispy granola, bake the dry ingredients an additional few minutes.) As soon as the oat mixture is out, add the raisins, stirring them into the other ingredients.

Now remove the honey from the heat and stir in the vanilla extract, then pour the hot liquid over the oat mixture and stir until all the dry ingredients are coated.

Next, press the granola firmly into the bottom of a greased 8" x 8" pan and place it in the still-warm oven to bake (at the same 300掳F as before) for 20 minutes. (An 8" x 8" pan makes bars about an inch thick; if you want thinner bars, use a slightly larger pan.)
Granola bars

1 c Brown sugar

1/2 c Light corn syrup

1/2 c Melted margarine

2/3 c Peanut butter

2 ts Vanilla extract

3 c Quick oats

1/2 c Sunflower seeds

1/2 c Coconut

1/3 c Wheat germ

1/2 c Raisins

1 c Carob chips

Preheat the oven to 350 F. Grease the bottom of a 9x12 (9x13?) baking dish (glass works best). In a large bowl combine the first 5 ingredients and stir well (it should be sort of a paste). Stir in remaining ingredients. You can add in whatever you want so long as the mixture is sticking together in several large clumps. Press the mixture into the baking pan ( you can use your fingers -- it's not very sticky). Bake at 350 for 15 - 20 minutes (until it turns golden brown). Cool completely and cut into bars. How do you make home made granola bars?
INGREDIENTS

3 cups quick-cooking oats

1 (14 ounce) can sweetened condensed milk

2 tablespoons butter, melted

1 cup flaked coconut

1 cup sliced almonds

1 cup miniature semisweet chocolate chips

1/2 cup sweetened dried cranberries

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.

In a large bowl, mix together the oats, sweetened condensed milk, butter, coconut, almonds, chocolate chips and cranberries with your hands until well blended. Press flat into the prepared pan.

Bake for 20 to 25 minutes in the preheated oven, depending on how crunchy you want them. Lightly browned just around the edges will give you moist, chewy bars. Let cool for 5 minutes, cut into squares then let cool completely before serving.
