Take her to the Theater especially a musical! And if you can sing learn some of the songs before hand..lyrics.com and sing them to her afterwards.

Take her horsebackriding, if she likes horses. Take her roller skating. Do something together where you are helping others like reading to children or old people. Take her to a comedy night somewhere and laugh until you cry together.
