My town has tons of Starbux and other chain restuarants and coffee bars, but no "mom pop" home style coffee shop. What should I look out for in way of costs? Start up fees? Hiring mangers/experienced personnel from competition? etc..What is the best advise starting a home town coffee shop?
Most likely you can look forward to long hours for short money.
It's possible to make it as a mom and pop shop, but it's a tough go.
Strongly suggest you get a job at a coffee shop and keep your eyes open. Best possible learning experience plus you should be able to get a handle on many of the costs.
