How to make chocolate bars (Industrial)?

I am NOT looking for making chocolate bars home. My team and I are doing a project, but before we can start we have a few questions.



1. Does one factory do all the process of chocolate making - from bean roasting to demoulding of chocolate bars, or is it split? Please answer this even if you don't answer anything else; it is crucial to our project.



2. If no, at which process does the split take place?

It really depends...some companies like to control their product from bean roasting to finished product. Others will buy the pre-made chocolate and melt it down to make into bars.



For example, Jacques Torres here in New York, who is a world famous chocolatier, roasts, grinds and processes beans for his confections in his chocolate shops (he has two here) because it's the only way he can be sure he'll get the quality and consistency he wants in his product.
