Well, in my limited experience with tiki bars, rum is the key liquor.
It's seems like tiki bars seem to cross over more than polynesian culture, and people will simply go "tropical" which can include Caribbean influences too. Kind of up to you.
Mai tais are a key beverage for the polynesian flare.
So, white rum, dark rum, curacao, orgeat syrup, lime juice... or a prefab mixer with the two rums.
Hinano is a decent Tahitian beer, again if you are sticking to the true tiki theme.
I would make the mai tai your signature drink, but have all the classic liquors available for whatever people want. Pick a beer you like to have on hand. If it's Bud, so what.
Blender, jigger, shot glasses, bar glasses, typical bar ware...

blender and ice maker of course - I would stock many flavors of rum and vodka also pina colada mix and margarita mix and tequila too....
